Harbison- Jasper Hill Farm
Harbison is a soft-ripened cheese with a rustic, bloomy rind. This creamy, bark-wrapped cows' milk cheese has a sweet, milky flavor that finishes with meaty, smoky, juniper notes that are imparted via the bark, which is harvested from balsam trees in the surrounding woodlands. With some toasted bread in hand, try it as it is or warmed in the oven for a few minutes.
