Pasta with Spinach Sauce and Olives

Bring a large pot of water to boil. Meanwhile, place the cleaned chopped spinach in the bottom of a colander in the sink. Warm a large serving bowl and place the garlic, red pepper flakes, olives, olive oil, and salt and pepper to taste, and stir, keeping the bowl warm until the pasta is done cooking. When the water comes to a boil, salt the water generously and cook the pasta to al dente. Reserve 1/4 cup of pasta cooking water, then pour the remaining water/pasta over the spinach in the colander. The hot water will wilt the spinach. Add the spinach and pasta to the warmed bowl, then add the reserved pasta water and toss all of the ingredients vigorously until all the noodles are coated. Season with additional salt and pepper to taste. Serve with additional salt, pepper, and red pepper flakes.

- 1 large clove or 2 small cloves of garlic, minced
- 1/2 teaspoon red pepper flakes
- 15-20 Kalamata and/or Castelvetrano olives, halved
- 5 tablespoons extra virgin olive oil
- salt & pepper
