Sottocenere- La Casearia Carpenedo
Sottocenere or Perlagrigia is a semi-soft pasteurized cow's milk cheese with slivers of black truffles mixed into the paste. Its rind is rubbed with extra virgin olive oil and truffle oil, and then covered with a layer of ash made from dried cloves, cinnamon, nutmeg, coriander and licorice that help prevent the cheese from drying out while imparting a most unusual and delicious flavor to the cheese. The ash rind is edible but is gritty so you may want to scrape it off. Made in the Veneto region of Italy.
