King Arthur Sir Galahad flour is a European-style artisan bread flour. Equivalent to a French type 55 (milled from premium hard winter wheat), it is a fairly low-protein bread flour (11.7%), making it very versatile for baking.This flour gives great spring and texture to French and Italian hearth-style breads. As a dough, it handles easily and has great fermentation tolerance. Ideal for baguettes, artisan breads, laminated doughs, and quick breads.
