Garganelli with Datterini Tomatoes

Pre-heat oven to 400 F. Heat the olive oil in a deep saute pan and add the onions. Saute until lightly caramelized. Add the tomatoes and break up with a wooden spoon; stir to combine. Season with salt and pepper. Simmer until mixture thickens and turns deep red, about 15 minutes. In the meantime, bring a large pot of salted water to a boil and boil the pasta for half as much time as called for. Add to the pan of tomatoes, stir to coat, and add cubed mozzarella. Taste, and adjust seasoning if necessary. Bake in preheated oven for 10-15 minutes until bubbly.

- 3 14 oz cans Carmeline 'e Datterini tomatoes
- 1 ball of fresh mozzarella, cubed
